Menu for the Week of Jan 4-12

Well ladies, here is my weekly menu. I have been trying out some new recipes as well as some old favorites.

M: Hamburgers, Fries, Salad

T: Pork Loin (in crockpot) with carrots, potatoes, mushrooms, and onions; add in some chicken broth and it is done; cook 7-8 hours on low

W: Crispy Garlic Chicken: 1 tsp bottled minced garlic, 1/4 c olive oil, 3/4 c Italian seasoning bread crumbs, 1/4 c grated Parmesan cheese, 1/4 tsp pepper, 4 6 oz skinned and boned chicken breasts
Preheat oven to 425 F. Combine garlic and olive oil. heat in microwave 30 sec or until warm.
Combine breadcrumbs, cheese and pepper. Dip chicken in olive oil and dredge in breadcrumbs. Place on lightly greased baking sheet. (Lazy way: cover baking sheet in foil!)
Bake 20-25 min or until chicken is golden. Serve with whole wheat angel hair and marinara (or in my case: brown rice)

H: Chicken Fajita Salad with Guac (I just grill the chicken after marinating in Italian dressing or Soy Sauce).

F: Chicken Tortilla Soup (in crockpot): 3-4 chicken breasts, frozen, 1 carton of chicken broth, 1 can stewed tomatoes, 1 can corn, drained, 1 can pinto or black beans, rinsed and drained, 1 c salsa, 2 Tbsp cumin; Place chicken breasts in bottom of a PAM sprayed crock pot, dump everything on top; cook on low 7-9 hours; serve with tortilla chips, cheese, low fat sour cream and guac if desired!
